Rice Noodle Patties

Chilli Mix:

  • 3 cloves Garlic, chopped fine
  • 1 Chilli, chopped fine
  • 2 slices Jalapeno chopped fine
  • 4/5 av. size Potatoes mashed
  • 20g Rice Noodles, chopped1/2 Onion, grated
  • 1 Carrot, grated
  • 1 Leek, chopped fine
  • 3 tsp Chilli paste
  • 2/3 Chicken Thighs, chopped fine

Ok so first post, feel like I’m setting the standard or something. I’ve decided that I’m gonna try to post recipes I ‘try’ rather than ones I nail. Hopefully I’ll post more often and put less pressure on myself for perfection!

I was trawling through some of the ‘Times 50 Best Food Blogs‘ for Blog design ideas and saw this recipe for a Patty! Been meaning to make an onion bhaji of sorts but didn’t fancy wasting all that oil on a one off deep fry. So this seemed like a good substitute. Just to be fair I got the basic recipe off some american blog

How to make:
First put some water on the boil and get the potatoes going. Cook until soft and then mash with a decent nob of butter.
Whilst the potato’s boiling:
Make the chilli mix: gather the garlicchilli and jalapeno in the mortar and grind to a near paste.
Heat some oil in a pan, add the chilli mix and chili paste.
Push around till its bubbling
Add the chicken (needs to be chopped as fine as possible or even minced if a possibility)

Stir for a couple of min
Add the onioncarrot, leak and a splurge of soy sauce
Cook for a good 5min, put to side
Cook the rice noodles for a couple of min and chop up so they’re less than an inch long
Add the chicken mixrice noodlesmash to a mixing bowl and mix
Add saltpepper
Form into flat balls or whatever shape, and fry in oil for 5 min

Before frying dip in whisked egg and then bread crumbs.

Note: When I made these I added 50g of rice noodle, making them unmouldable. Or they just fell apart into the egg(got a bit messy). So I found frying them straight easier. With the altered recipe(above) it shouldn’t be a prob. You can also get away with adding more potato if you want them to go further.
